So it might not feel like it yet here in Nashville but the calendar says it is officially fall! And you know what that means… it’s pumpkin season!!
I gotta admit… I am a sucker for all things pumpkin. Pumpkin spice lattes, pumpkin pancakes, pumpkin cookies, pumpkin muffins, etc. But this year these things are sounding too sweet to me. Don’t get me wrong, I will still indulge occasionally but they aren’t sounding “quite” as good to me as they have in the past.
It got me wondering about healthy pumpkin options. I tried out two this weekend but would love to hear more ideas if you have them!
One thing I tried was putting pumpkin pie spice in my coffee grounds. It had a nice hint of pumpkin flavor without all of the calories and sugar of a pumpkin spice latte.
The other thing I tried was a healthy pumpkin muffin recipe- no flour or sugar!
